Green bean casserole… again?

Tired of green bean casserole for the holidays? If so, here is a delicious green bean dish that is sure to get rave reviews. I have had this recipe for years and it has become a tradition at Thanksgiving and Christmas. Enjoy!

1/4C extra virgin olive oil
2 yellow onions – finely chopped
2 garlic cloves – finely chopped
1 can diced tomatoes (14.5 oz can)
1TBSP oregano and parsley
salt and pepper
1 lb green beans trimmed
crumbled Feta cheese

1. Heat oil in sauce pan on medium heat
2. Add onions and sauté until soft and clear – about 10 minutes
3. Add garlic – cook briefly until golden brown
4. Add tomatoes, salt, pepper, oregano and about 1 C water
5. Stir in green beans and bring to boil
6. Reduce heat, cover and simmer until beans are tender
7. Put in serving dish and top with feta cheese
