Every morning I debate about which “favorite” breakfast food I will eat. Most often it is a toss up between a pumpkin spice muffin or a yogurt parfait.
Yogurt parfait is easy and contains a lot of good, wholesome ingredients: whole milk plain yogurt, fresh or frozen fruit, nut butter, granola and cinnamon. I layer the ingredients in a container – in picture is a wine glass…handy for more than wine.
First the fruit – about 1/4 C
Next – yogurt – about 2 heaping Tbsp.. i use plain to avoid the sugars in the flavored yogurt; and I use whole milk to eliminate the chemicals that low fat and fat free contain.
Followed by – nut butter – 1 Tbsp as I love peanut and cashew nut butter. I use the nut butter that is just nuts, no additives.
Then, some granola, to provide some crunch
Topped with cinnamon, about 1/2 tsp
Sometimes, if the muffin wins my breakfast choice, I may have this parfait for lunch. That’s a win-win for me!
